Strawberry Nut Cake

1 box Duncan Hines Cake mix
1 box Strawberry jello
1 cup Wesson oil
1 cup frozen Strawberries
1/2 cup milk
4 eggs
1 cup flake coconut
1 cup nuts

Mix all ingredients and bake at 350 degrees in 3 eight inch layer pans for 25 to 30 min.


1 box powdered sugar
1 stick butter or margarine
1/2 cup strawberries
1/2 cup nuts
1/2 cup coconut

Mix and spread between layers and on top of cool cake.

(Editor’s note: The two recipes below are slightly different. The first calls for nuts in the icing, while the second does not. And the first calls the topping “icing,” while the second calls it “frosting.” Where do you think the first — the mimeographed one, with faded purplish ink — comes from? Sometime before the days of Xerox?)

  1. Ummm… the dark ink one is definately Grandma’s handwriting, while the first one is not. I think the first is a copy of the second… perhaps my handwriting… and perhaps by that time, Grandma was adding nuts to the icing and told me to add that. This sounds yummy, but I am not remembering this cake like the blue berry salad.
