Old Post Office Crab Cakes

1/2 cup mayo
1 T Dijon
Juice of 1/2 lemon
1/2 T Old Bay
Cayenne Pepper to taste
Black ” ” ”
1/2 cup fresh ground bread crumbs
1/2 lb. jumbo lump
1/2 lb. claw meat
1 egg white whipped stiff

Combine all ingredients except egg white. Whip egg white to stiff peak & fold into mixture. Form cakes & brush tops with butter if desired. Bake at 350 degrees for 15-20 minutes or until golden brown. Top with Hollandaise or cream sauce. (Makes one dozen)

(Editor’s note: The Old Post Office is a restaurant in Edisto Beach, S.C., and the way I figured that out is that — after finding the “Old Post Office” recipe in Grandma/Momma/Bee’s cookbook — I came across the postcard below in another box of papers. Luckily, the father of one of my good friends from college pastored a church on Edisto for several years, so I e-mailed her to ask if she knew any Old Post Office stories. This friend, now a professional musician who often gets gigs in restaurants and bars, had this to to say: “Funny you should ask about this place because I just got a call about it a few weeks ago. It’s literally just reopened and they were calling to tell me I needed to come back because the whole piano bar part of it is new. It used to be known as the fine dining destination on Edisto … had quite a reputation drawing diners from miles and miles around. And then in true Edisto fashion, the owner (a known drug dealer) was arrested on tax evasion charges and the government repossessed the building. Apparently these new owners are just getting started, and they’re newcomers so it’s an uphill battle I’m sure and the jury is still out.” What a scoop!)
