“Quickie” Lemon Meringue Pie (Condensed Milk)

1/2 Cup lemon juice
1 teaspoon grated lemon rind
2 egg yolks
1 can condensed milk

Mix together & pour into baked pie shell. Top with meringue

2 egg whites, beaten in peaks
1/4 teaspoon cream of Tartar
2 T sugar

Bake 325 degrees F for 15 or 20 min.

Editor’s UPDATE: The photo above was taken by Aunt Boyd after she made this pie for Uncle Tom for his 60th birthday, on July 7, 2009. She said, “Here is my picture of the pie. The meringue did not do great because I made it at the lake and I whipped it BY HAND (no electric mixer) — which was harder than you might think! It was really yummy though … this is a great recipe.”)

  1. This is Tom’s favorite pie and I am in the process of making it today for his birhday. When he was little his mother made two pies and one whole one was just for him while the family shared the other one. This is a delicious, very easy pie.

    It is just a shame that the cans of sweetened condensed milk are smaller than they used to be. but I guess that means fewer calories per slice.

    (I will confess that I do not have any lemon rind as I am using bottled lemon juice – but that will be our little secret.)
