Eggplant Casserole

In 3-Julia Crider Garris 1909-2012, 3-Wilhelmina (Bee) Garris King 1918-2007, FAMILY: BROTHER & SISTERS (BEE) on January 17, 2010 at 9:00 am

Boil one large peeled eggplant until soft.

Mash up & add

Saltines (crushed) to take up moisture
1 slightly beaten egg
1/2 lb New York sharp cheese cut into chunks

Bake in oven at 350 for 20 minutes

I have found oysters to be very compatible with this. Mushroom + chestnuts (sliced).

(Editor’s note: Grandma/Momma/Bee notes that she got this recipe from “Aunt Julia” in “1970.” Do her additional comments mean it’s good to add oysters into the casserole, or to serve alongside? I think the “chestnuts” are referring to water chestnuts, not chestnut chestnuts.)

  1. This looks easy and sounds delicious. I’ve never made it, but I will now. Yes, water chestnuts would give it a good crunch.
