Old South Carrot Cake

2 cups all purpose self rising flour
2 ” sugar
1 teaspoon ground cinnamon
4 eggs
1 cup vegetable oil
2 ” grated carrots

Combine dry ingredients. Combine eggs & oil beating well. Fold in dry ingredients & carrots.

3 greased cake pans & bake 375 for 25 minutes. Cake layers will be thin. Cool 10 mi in pans then remove & cool completely.

Spread cream cheese frosting

Cream cheese Frosting

1/2 C. butter softened
1 (8 oz) pkg cream cheese
1 (16 oz) pkg. powdered sugar
2 teaspoon Vanilla Extract
1 Cup chopped pecans
1 cup flaked coconut

Combine butter & cream cheese

Cream until light & fluffy. Add sugar & vanilla mixing well. Stir in pecans & coconut; yield enough frosting for 3 layer cake
