Fresh Strawberry Pie

In 3-Wilhelmina (Bee) Garris King 1918-2007 on April 8, 2010 at 7:30 am

Bake Pie shell & let cool

Wash 1 quart fresh strawberries

Cut up 1 cup for filling & place rest in fridge with sugar

Mix 1 cup water with the cup strawberries above and add
1 cup sugar
4 tablespoon Corn starch
Add Red food coloring for color

Boil until thick & let cool. If too thick add water. If too thin add more starch dissolved in water. It will thicken some as it cools. Cool. Mix together with fresh strawberries & place in pie shell. Place in fridge for an hour or two. Top with Cool whip. Serve.

(Editor’s note: The words above come from the blue-and-white checkered recipe, not the notecards, since it gives more detail. The blue-and-white checkered card comes from a memory book called “The Keepsake Recipe Collection” that Aunt Boyd gave Grandma, to encourage her to write all her kitchen creations down.)

  1. This is so delicious – I remember it well – this is Momma/Grandma’s own creation. And it is almost Strawberry season – get out the pie crust!

  2. I am making a Strawberry pie for Bill tonight! Once I helped Momma King make it.The recipe that she gave me calls for a small box of strawberry jello and no food coloring. I always use sugar free jello.

  3. Oh, Aunt Julie, can you scan and send it that strawberry pie recipe to me sometime? Or maybe sometime this summer I can borrow all the “Grandma” recipe cards you have, then scan them, and give the originals back to you?
