Fresh strawberry pie

Bake Pie shell & let cool

Wash 1 quart fresh strawberries

Cut up 1 cup for filling & place rest in fridge with sugar

Mix 1 cup water with the cup strawberries above and add
1 cup sugar
4 tablespoon Corn starch
Add Red food coloring for color

Boil until thick & let cool. If too thick add water. If too thin add more starch dissolved in water. It will thicken some as it cools. Cool. Mix together with fresh strawberries & place in pie shell. Place in fridge for an hour or two. Top with Cool whip. Serve.

(Editor’s note: This recipe was originally posted here online in April 2010, for Uncle Billy’s birthday. Grandma/Momma/Bee dates this recipe to 1960 in New Bern, though it must be somewhat similar to the pie she ate while growing up in Round O. The only difference would be the Cool Whip, since, according to its Facebook page, Cool Whip was first introduced in 1966. According to this Wikipedia post, Cool Whip was invented by William A. Mitchell, a General Foods Corporation food chemist.)
