Shrimp & grits (Charleston style)

1 lb shrimp
2 C grits
4 T milk
2 T Butter
1 T Ketchup
Dash Tabasco
Garlic salt & lemon salt
5 C water
1/2 T salt
1 T cream
1 T parsley

Boil grits & water 30 mi. Blend in milk & cream & set aside.

In saute pan, on med heat
2 T butter, parsley & shrimp. Blend in ketchup & Tabasco, parsley — cook 2 mi.

P.S. If you have more shrimp — use them.

Jessica King Snead gave it a thorough testing during Beach Week 2015, and reports: “We made a slurry of all the shrimp topping ingredients – salt, real garlic, butter, cilantro (we had no parsley), Texas Pete (we had no Tabasco), ketchup, lemon juice. Then cooked the shrimp in it. We used half and half for both the milk and cream since we didn’t have cream.”)
