Shrimp Gumbo

Ham drippings from baked ham are great to start with. If you haven’t got that – Start with a grease base.

1/2 cup bacon grease
1 lb chopped okra
2 large cans tomato sauce
1 can chicken broth
1/2 stalk celery chopped
2 chicken buillion cubes
1/2 teaspoon Worcestershire
1 pound fresh shrimp cleaned
1 lb crab meat

Cook first 4 ingredients about 1 hour. Add celery about 20 minutes before you eat. Add Worcestershire & shrimp & crab meat at the very last. Let boil up good — not over 5 minutes. Overcooking of shrimp cause them to be soft instead of firm. Serve over hot rice. 1 cup flour in cold water to thicken

(Editor’s note: The direction for the flour at the very last may be a bit confusing, but most probably it can be used as it’s used in Low Country Gumbo.)
